Description
Beef short ribs are 1/4 inch thick and have meat and bones. Short ribs are cut from the rib and are great for barbecuing and braising! The 3lb option comes with 2-3 individually packed ribs.
Our cows live on hundreds of acres in upstate New York and are rotationally grazed on certified organic pasture. Rotationally grazing means that the animals are moved from one paddock of pasture to another so that they are constantly getting fresh grass to eat. There are no chemical or synthetic fertilizers used on the pasture. The cows have not been given any hormone implants or any type of hormones and have never been given any antibiotics.
All weights are rough estimates +/- 0.25LBS. When we process our animals it is very hard to get an exact weight on each cut.

Meatiness varies
Halal short ribs are almost unheard of and 100% grass fed halal short ribs even rarer. While the flavor of these is great, I find the amount of meat on the ribs varies greatly between orders. Two packages we've ordered were mostly bone and connective tissue with some fat and very little meat. One package in the same order was very meaty. Given that grass fed cows are leaner I expect there to be less meat on the ribs but wish the amount was more consistent.

phenomenal flavor
I was delighted to receive this product -- an ethically produced, zabiha halal choice cut (short ribs). After five hours at 260 F, and then 8 minutes under the broiler, these were both tender and delicious. JAK
